Easy Homemade Enchilada Sauce



I wanted to keep my Zucchini Enchiladas as fresh as possible so I decided to make my own enchilada sauce.  I was surprised at how easy and delicious this homemade sauce is!  I got the recipe from Ambitious Kitchen here.  Check out her page – she’s really got it going on with a variety of healthy recipes for breakfast, lunch, dinner and snacks!  I always refer her to site when I am trying to keep it clean in the kitchen!



  • 2 Tsp. olive oil
  • 1 small white onion, chopped
  • 3 garlic cloves, minced
  • 2 and 1/2 Tsp. chili powder
  • 1 Tsp. cumin
  • 1 Tsp. dried oregano
  • 1/4 teaspoon salt
  • (1) 15 oz. can tomato sauce
  • 2 Tbsp. tomato paste
  • 1/2 cup of water
  • 1/2 Tsp. apple cider vinegar
  • Salt and pepper to taste



Heat oil in a medium pot over medium/high heat.  Add the onions and garlic and saute for five minutes or until onions become translucent. Add in all of the seasonings and stir for thirty seconds to allow the spices to blend together.  Stir in the tomato sauce, tomato paste and apple cider vinegar and bring to a boil and voila!  Eat now or store in the freezer for later!
