Fresh Mexican Cauliflower Rice

Looking to have some fun with your vegetables this summer?  Try this Mexican Cauliflower Rice inspired by Skinnytaste’s Gina Homolka. You can see her recipe here.  We’re all trying to keep it light in the kitchen so we can look fab in our summer wear, so bookmark this one, guys!


  • 4 cups cauliflower crumbles
  • 1 Tsp. olive oil
  • 1 medium onion, finely diced
  • 1 large tomato, diced
  • 1 jalapeno minced (seeds and membrane removed)
  • 2 garlic cloves, minced
  • 2 Tbsp. tomato paste
  • 1/2 Tsp. cumin
  • 1/4 Tsp. smoked paprika
  • 1/4 Tsp. Cayenne Pepper
  • 1 Tsp. Kosher Salt
  • Freshly Ground Black Pepper
  • chopped cilantro





Heat oil in a skillet over medium/high heat.  Add the onions, tomatoes, and jalapeno and saute for about two to three minutes or until tender.

Add the garlic and cauliflower and saute another two minutes.  Next, add the tomato paste and seasonings and stir for a minute.  Top with cilantro and enjoy.
