Guacamole Deviled Eggs

If you love guacamole, you will enjoy adding it to this version of deviled eggs! The hardboiled egg whites act as a perfect substitute to chips which makes for a healthy appetizer option for your upcoming Cinco de Mayo festivities!





6 large eggs

1 avocado

1 onion

1/2 red pepper

1-2 tsp garlic powder

Salt and ground pepper to taste

Chili pepper flakes (for garnish)



Boil eggs and simmer for 15 minutes

Cool eggs under cold water and peel

Cut eggs in half (I like to mix both horizontal for more of a boat shape and vertical for more of a cup shape)

Mince the onion and red pepper

In a bowl, mash together avocado and lime juice

Add garlic powder, salt and pepper to taste

Add minced onion and red pepper

Scoop guacamole evenly into each egg half

Garnish with pepper flakes
