Monday’s (for most of us) are the days back to the stricter routine that the work week and life schedule brings. For meal time on a Monday, I usually want something I can throw together quickly and still be satisfied with, which inspired a series for simple meals. First up: Egg Cups.
Egg cups are great because they can be customized to include any ingredients you enjoy most, they are easy and inexpensive to make, plus they last for a few days in the fridge making them the perfect meal prep for breakfasts or lunches throughout the week.
This version of egg cups included ground turkey, whole egg, bell peppers and onions. When your ready to eat an egg cup, simply heat up in the microwave powered down for 20-30 seconds and serve. For added flavor, you can sprinkle with shredded cheese and a dash of hot sauce!
- Pre-cook turkey or meat of your choice
- Preheat oven to 350°F
- Chop veggies
- Using a muffin tray, fill each muffin cup with:
- 1/4 C cooked meat / half of the muffin cup
- One egg
- Chopped veggies
Bake for 20-25 minutes until egg is set and no longer runny. Remove tray from oven and let cool. Use a spoon to remove egg cups from the tray, store in a food storage container and refrigerate.
