The perfect Fall Snack: Pumpkin Seeds

The MAIN reason I was so excited about carving pumpkins was because I knew I was going to get to snack on the seeds.  I also valued the time I got to spend with my husband.

I cleaned out the pumpkins, saved the seeds and washed the seeds to rid them of the orange pumpkin goop.  I laid them out on an (olive) oiled baking sheet and roasted them in the oven at 300 degrees to dry them out.  I used salt and pepper to taste.  I baked them in the oven for another 20 minutes until they were golden.
