Two Tasty Tacos

When it comes to food, this summer was definitely the summer of tacos. We recently moved to Cleveland and the taco frenzy started with our obsession with Barrio. Their Tremont location is right down the street from us so the short walk has led us there for appetizers, lunches, dinners and the occasional drinking snack.

Towards the end of summer, we expanded our taco eating outside of Barrio and into our own kitchen. We’ve been a fan of the La Banderita taco shells for some time now since they are a gluten and guilt free substitution for bread. Whenever cooking tacos at home in the past, they were usually the standard ground beef w/ taco seasoning, lettuce, and cheese. After trying so many different combinations at restaurants, I was inspired to take it up a notch.

Throughout August, I think we ate homemade tacos 2-3 times per week! Tacos with many different types of meat, new spices, slaws and a variety of other toppings.

My favorite thing about making tacos is that anything goes… I actually feel like it would be extremely hard to make a combination that tasted bad.

SESR TACOS

I loved shopping for all the fresh ingredients and experimenting with the different flavors. Here’s the breakdown for the two combos I enjoyed the most:

#1 (Pictured on Left)

  • Pulled chicken (seasoned with cumin, cayenne, lemon pepper & garlic powder)
  • Sriracha BBQ sauce (mixed thick BBQ sauce + sriracha, vinegar, pepper and garlic powder to taste)
  • Roasted corn, peppers and onions
  • Cilantro garnish

#2 (Right)

  • Pulled chicken (seasoned with cumin, cayenne, lemon pepper & garlic powder)
  • Creamy garlic sauce (blended 1 C greek yogurt, 1 TSP Apple Cider Vinegar, 1 C cilantro, 2 cloves of pressed garlic)
  • Slaw – vinegar based vs. cream (mixed olive oil, apple cider vinegar, salt, pepper and garlic powder to taste)
  • Roasted corn, peppers and onions
  • Cilantro garnish

With so many memories eating great tacos this summer at amazing restaurants and at home, I’m really excited to continue the fun with fall flavors!
